1 can Black Beans

1 can corn

1 can diced tomatoes(drained) or two fresh roma tomatoes

1 small green chili chopped

1-2 sliced green onions

fresh cilantro

2-4 white fish filets (tilapia, cod, etc…)

3 – 5 Tablespoons Acapulco Gold Blend (adjust to personal taste)

In a casserole dish, add and combine first 5 ingredients, (reserve a small amount of green onions). Seasons the mixture with Acapulco Gold Blend (2-3-4 generous pinches)

Season liberally both sides of the fish filets with Acapulco Gold and lay the filets atop the bean/corn mixture. Sprinkle remaining green onion over the top.

Cover with foil and bake at 400 degrees for 25-30 minutes. Uncover and sprinkle with cilantro to taste. Place back in oven for an additional 5 minutes.

Serve with your favorite bread and ENJOY!!!!!!
