Ribs with a “LATIN” flair

One slab of pork spare ribs

3 Tablespoons of olive oil or grapeseed oil

Acapulco Gold Blend

Preheat the oven to 325 degrees

Coat the ribs with the oil and rub Acapulco Gold Blend generously into the meat. Place ribs on a baking sheet and cover tightly with aluminum foil.  Place the ribs in the oven and cook them for 2 hours. Remove the ribs from the oven and let them set-up for about 20 minutes. Uncover and place on a hot grill on indirect heat. Sprinkle with more Acapulco Gold and finish cooking the ribs on the grill. Ribs should be cooked after they are removed from the oven but the finish on the grill makes them even better.
