Acapulco Gold Omelet

3 eggs

Cut up veggies of your choice

1-2 Tablespoons of unsalted butter

1/8 cup of grated cheese (optional)

1/2 cup sour cream

fresh avocado slices

Acapulco Gold Blend

In a bowl mix the sour cream with Acapulco Gold to taste. Let this mixture set-up for 1/2 hour. Beat the eggs in a bowl and set aside.

Saute the veggies in 1 tablespoon of unsalted butter until translucent.

Heat the remaining butter in a skillet and add the eggs. When the eggs start to cook and get firmer, add the sauteed veggies. When the underside of the omelet browns up a bit, add the cheese if desired and gently fold the omelet over in half. Continue cooking until the eggs are cooked through. Carefully remove the omelet and place on a serving platter. Arrange the avocado slices across the top of the omelet and spread the sour cream mixture over the top.
