Love MI Seasons Chicken Breast Saute

Serves 4

1 1/2 pounds boneless skinless chicken breast (2 very large) cut into quarter inch scallops (slices)

1 cup rice flour (available in the Asian section of most supermarkets)

Love Mi Seasons Fresh Herb Blend to taste (approximately 2 teaspoons)

4 Tbsp. Avocado or Olive Oil

juice of 2 limes

Method;

Spread rice flour on plate or sheet tray

Lay chicken scallops (slices) on top of flour in single layer and season with Fresh Herb Blend, sprinkling between fingers (remember this is seasoned salt)

Press lightly into chicken meat, turn chicken to coat and shake off excess flour

In a non-stick skillet, add oil, heat skillet over medium high heat, add chicken. Saute approximately 2-3 minutes until almost opaque, turn and cook 1-2 minutes more. Remove and place on a warm platter and keep warm. Add remaining oil and continue until all chicken is cooked. Remove skillet from heat, squeeze in the juice of 2 limes and sprinkle with a little more Fresh Herb Blend, scraping up any browned bits and pour over chicken.

Serve with salsa or tomato salad
