Fabulous Fajitas

1 flat iron steak (substitute skirt or sirloin if desired)

olive oil

1 small onion chopped

1 bell pepper chopped

flour or corn tortillas (in foil and heated on low in the oven)

Acapulco Gold Blend

This recipe is best kept simple because the flavor of the meat with Acapulco Gold is amazing!

Coat the steak with olive oil and liberally rub with Acapulco Gold Blend. Let the steak set up at room temperature for about 1/2 hour.  While the meat sets up, saute the onion and bell pepper. When it is time, fire up the grill and cook the steak until it is medium rare or to desired doneness. Place on a platter and cover with foil for 10 minutes. Put the meat on a cutting board and slice into fajitas strips. Take a tortilla of choice and fill with steak, and veggies. Additional add-ons could be avocado, sour cream, cilantro, etc…
